    • 2 lbs pork tenderloin, thinly sliced
    • 3 tablespoons olive oil

    Cooking Instructions:

    1. Marinate the Pork: In a large bowl, combine the olive oil, Sriracha sauce, lime juice, honey, cumin, smoked paprika, garlic powder, salt, and pepper. Add the sliced pork tenderloin to the marinade, making sure each piece is well-coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.
    2. Prepare the Vegetables: While the pork is marinating, slice the bell peppers and onion. Set them aside until ready to cook.

    6. Warm the Tortillas: While the vegetables are cooking, warm the flour tortillas on the grill for about 30 seconds on each side, or wrap them in foil and place in a warm oven until ready to serve.
    7. Assemble the Fajitas: To assemble the fajitas, place slices of grilled pork and sautéed vegetables on each tortilla. Garnish with fresh cilantro and serve with lime wedges on the side.

    Extra Tips:

    For an extra burst of flavor, consider adding a smoky chipotle sauce or a dollop of sour cream to your fajitas. If you prefer less heat, reduce the amount of Sriracha sauce in the marinade.

    When grilling, make certain the grill is hot enough to sear the pork quickly, which helps to lock in the juices and keep the meat tender. Additionally, letting the meat rest after grilling allows the juices to redistribute, resulting in a more flavorful bite.
