The grilling method enhances the natural flavors of the fish and vegetables without the need for excessive oils or fats, making it a nutritious choice for the whole family. The beauty of this dish is in its adaptability to whatever ingredients you have on hand, making it a go-to recipe for any night of the week.

    Ingredients (Serves 4-6)

    • 4-6 fish fillets (such as cod, salmon, or tilapia)
    • 2 lemons, thinly sliced
    • 1 bell pepper, thinly sliced
    • 1 zucchini, thinly sliced
    • 1 red onion, thinly sliced
    • 2 tablespoons olive oil
    • 2 tablespoons fresh dill, chopped
    • 2 cloves garlic, minced
    • Salt and pepper to taste
    • 1/4 cup white wine (optional)
    • Aluminum foil or parchment paper

    Cooking Instructions

    1. Prepare the Grill: Preheat your grill to medium-high heat, around 400°F (200°C). If you’re using a charcoal grill, confirm the coals are evenly distributed and have a light layer of ash on them.
    2. Assemble the Packets: Lay out four to six sheets of aluminum foil or parchment paper, each large enough to create a packet around the fish and vegetables. Lightly coat the center of each sheet with olive oil to prevent sticking.
    3. Layer Ingredients: Place a fish fillet in the center of each sheet. Season the fish with salt, pepper, and a sprinkle of minced garlic. Arrange slices of lemon, bell pepper, zucchini, and red onion over and around the fish. Top with a sprinkle of fresh dill.
    4. Add Liquid: Drizzle a small amount of olive oil and, if using, a splash of white wine over the ingredients. This will help steam the fish and vegetables as they cook, enhancing their flavor.
    5. Seal the Packets: Fold the sides of the foil or parchment paper over the fish and vegetables, then fold the top and bottom to create a sealed packet. Make sure there are no open edges where steam can escape.
    6. Grill the Packets: Place the packets on the preheated grill, seam side up. Close the lid and grill for 10-12 minutes, depending on the thickness of your fish fillets. The fish should be opaque and flake easily with a fork when done.
    7. Serve: Carefully unwrap each packet (watch out for steam) and serve directly in the packet or transfer to a plate. Enjoy with your favorite side dish.

    Extra Tips

When choosing fish for Grilled Fish Packets, opt for firm fillets that will hold up well during grilling, such as cod or salmon. If you prefer a milder flavor, tilapia is a good choice.

Feel free to experiment with different herbs and spices based on your preferences; for instance, adding a pinch of red pepper flakes can provide a nice kick. Always confirm the packets are sealed properly to trap steam, which is vital for cooking the fish evenly.

Additionally, if you’re using parchment paper, it’s a good idea to double the layers to prevent tearing.

Consider experimenting with different herbs and spices to suit your taste preferences, such as adding a pinch of smoked paprika or a splash of white wine before sealing the packets. This recipe serves 4-6 people, making it perfect for a family meal or a small gathering. Preparing these packets ahead of time makes for a stress-free cooking experience, allowing you to enjoy more quality time with your loved ones.

    Ingredients (Serves 4-6):

    • 4-6 white fish fillets (such as tilapia or cod)
    • 1 tablespoon olive oil
    • 2 tablespoons chipotle in adobo sauce, finely chopped
    • 2 cups fresh corn kernels (or frozen, thawed)
    • 1 red bell pepper, diced
    • 1 small red onion, thinly sliced
    • 2 cloves garlic, minced
    • Juice of 1 lime
    • 1 teaspoon ground cumin
    • 1 teaspoon smoked paprika
    • Salt and pepper, to taste
    • 1/4 cup fresh cilantro, chopped
    • Lime wedges, for serving

    Cooking Instructions:

    1. Preheat the Grill: Start by preheating your grill to medium-high heat. This guarantees that the packets cook evenly and achieve the desired smoky flavor.
    2. Prepare the Fish Packets: Cut six large pieces of aluminum foil, about 12 inches long each. Place a fish fillet in the center of each piece of foil.
    3. Season the Fish: Drizzle olive oil over each fillet and sprinkle with salt, pepper, ground cumin, and smoked paprika. Pat the seasonings into the fish gently with your fingers.
    4. Add the Vegetables: In a medium bowl, combine the corn kernels, diced red bell pepper, sliced red onion, minced garlic, and chopped chipotle in adobo sauce. Mix well and evenly distribute the mixture over each seasoned fish fillet.
    5. Add Lime Juice and Cilantro: Squeeze lime juice over each packet, and sprinkle with fresh cilantro.
    6. Seal the Packets: Fold the sides of the foil up over the fish and vegetables, and fold the edges tightly to seal the packets. Make sure there are no gaps to keep the steam inside.
    7. Grill the Packets: Place the packets on the preheated grill and cook for about 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
    8. Serve: Carefully open each packet, being mindful of the hot steam, and transfer the contents to a serving plate. Serve with lime wedges on the side.

    Extra Tips:

When preparing Southwest Chipotle and Corn Fish Packets, it’s important to choose a firm, white fish that holds up well to grilling, like tilapia or cod. If you’re using frozen corn, make sure it’s completely thawed and drained to prevent excess moisture in the packets.

Adjust the amount of chipotle to your preferred level of spiciness. If you prefer a milder flavor, use less chipotle or remove the seeds from the peppers. These packets can also be baked in the oven at 400°F (200°C) for 15-20 minutes if a grill isn’t available. Enjoy this dish with a side of rice or fresh salad for a complete meal.
